Pachamanca is a traditional Peruvian dish that is based on
baking the food on hot stones. Pacha means
earth and manca means pot – so baking in an earth pot. All students with their homestay families were
invited to the Pachamanca on the Albergue farm – our worksite – on the first
Sunday in Ollantaytambo. A hole is dug
in the ground and special baking stones (those that have been used in baking
before) are heated with a wood fire for about four hours. The pictures below show the process.
We're a little behind in the BLOG process due to a slow internet and a few sick students, but we will catch up. I expect everyone to go on the hike tomorrow.
